RE: Incoming mail address(es) that I don't want

This is a basic configuration... your current configuration is wide-opened for spamming.

Create a Server Configuration document (if you don't have one). Then go to "Router / SMTP" / "Basics" then Address Lookup and select "Fullname only" :

Router/SMTP Basics
Number of mailboxes:
SMTP used when sending messages outside of the local internet domain:Enabled
SMTP allowed within the local internet domain:Disabled
Servers within the local Notes domain are reachable via SMTP over TCPIP:Always
Address lookup:Fullname only

I would also suggest the following configuration to prevent from having Dead mail in your mail.box :
"Router / SMTP" / "Restrictions and Controls" / "SMTP Inbound control"
then set like this :

Inbound Intended Recipients Controls
Verify that local domain recipients exist in the Domino Directory:Enabled

Restart the router task on your server.
